I stole this recipe for Cheesy Spinach Casserole from All New! Secret Restaurant Recipes who stole it from Abuelo’s. This fancy spinach casserole was stolen from a restaurant. Onions and mushrooms are cooked, then garlic, chipotle pepper and seasonings are added in. Two cheeses are mixed into until melted, then spinach and corn is added. Everything is transferred to a baking dish before a third cheese is sprinkled on top before baking. This spinach casserole is so tasty that everyone should love it, even kids!
Preheat oven to 350 F. Then spray 1 quart baking dish with nonstick cooking spray. In a large saucepan add 1 tbsp oil, then add 1 small chopped onion to saucepan; cook and stir 3 minutes or until softened. Next add 1 cup sliced mushrooms.
Cook and stir 5 minutes or until vegetables are tender. Then add 3 cloves minced garlic, 1 ½ tsp minced chipotle pepper in adobo sauce and 1 tsp seasoned salt; cook and stir 1 minute more.
Next add 8 oz pasteurized chopped processed cheese and 4 oz chopped cream cheese to the saucepan; cook until melted, stirring frequently. (Instead of using the brick type processes cheese, I used the jar since it was a smaller quantity to purchase.)
After the cheese is fully melted add 10 oz frozen spinach that has been thawed and drained and 1 cup corn; cook and stir 3 minutes.
Transfer to prepared baking dish; sprinkle with ½ cup shredded Monterey jack and cheddar cheese blend.
Bake 20 to 25 minutes or until cheese is melted and casserole is bubbly; if desired, broil 1 to 2 minutes to brown top of casserole.
Dish out the cheesy spinach goodness!
