
I stole this recipe for Slow Cooker Pork Tenderloin from dinneratthezoo.com. This recipe is a delicious entrée that is prepped in under 10 minutes. Pork tenderloin is seasoned and then seared in a skillet. After the seared pork is placed in the slow cooker, a sauce is made with chicken broth, soy sauce, balsamic vinegar, brown sugar and garlic. The tenderloin cooks for several hours then the sauce is poured in a pot and boiled. Cornstarch is added to thicken the sauce, and then the sauce is poured over the sliced tenderloin.

Heat 1 tbsp olive oil in a pan over medium high heat. Then season the pork tenderloin on all sides with salt, pepper and Italian seasonings. Next sear the pork for 5-6 minutes per sides, or until golden brown.

Place the pork in a slow cooker. In a small bowl, mix together 1 cup chicken broth, ¼ cup soy sauce, 2 tbsp balsamic vinegar, 2 tbsp brown sugar and 2 tsp minced garlic. Pour the sauce over the pork.

Cover the slow cooker and cook on LOW for 6-8 hours, or HIGH for 4 hours. Remove the pork from the slow cooker and place on a plate; cover with foil to keep warm.

Pour the liquid from the slow cooker into a pot. Next, heat the pot over medium heat and bring the sauce to a simmer. Mix 2 tbsp cornstarch with ¼ cup cold water. Add the cornstarch to the pot and bring to a boil.

Cook for 1 minute, or until sauce has just thickened. Then add 1 tbsp butter to the pot and stir until melted. Remove the pot from the heat.

Slice the pork tenderloin.

Pour the sauce over the slices. Then sprinkle with parsley and serve.
