I stole this recipe for Stovetop Mac and Cheese from dinneratthezoo.com. This recipe is a quick and easy way to make homemade mac and cheese. Everything cooks in one pot. Butter and flour cook together first before adding in water and milk. Then uncooked noodles and seasoning is added. The sauce simmers until the pasta is cooked, then shredded cheeses are added in. After stirring to melt the cheese, this cheesy mac and cheese is ready to eat. Cooks just as quick as the box mix of mac and cheese, but tastes so much better!
Melt 2 tbsp butter in large pot over medium heat. Add 2 tbsp flour, then whisk until combined, about 30 seconds.
Pour in 2 cups water and whisk until smooth and just thickened. Then add 3 ½ cups milk and whisk until combined. Next stir in 1 lb elbow macaroni, ¾ tsp salt, ¼ tsp garlic powder, ¼ tsp onion powder, ¼ tsp smoked paprika and ¼ tsp pepper.
Bring the mixture to a simmer. Cook for 8 to 10 minutes, stirring occasionally, until pasta is done. Then turn the heat to low, and add in 4 cups shredded cheddar cheese and 1 cup shredded mozzarella cheese.
Stir the cheeses into the sauce.
Keep stirring until the sauce is smooth. Sprinkle with 1 tbsp parsley.
Serve the cheesy goodness!
