I stole this recipe for Crock Pot Chicken Teriyaki from myrecipes.com. This recipe is an easy to make slow cooker meal that has only 5 ingredients. Chopped chicken is mixed with chicken broth, teriyaki sauce, brown sugar and minced garlic. All of the ingredients are placed in a slow cooker and cooked for several hours. Serving over cooked rice finishes this dish. Using jarred teriyaki sauce adds a lot of flavor without all the work of making the sauce yourself.
Did you know? Teriyaki is a Japanese dish where beef or chicken has been marinated in a mixture of soy sauce, sake, sugar, ginger and seasoning before cooking. The sugar in the marinade gives the cooked food a slight glaze.¹ (see more trivia in the Trivia tab)
Dice 1 lb of chicken.
Combine 1 cup chicken broth, ½ cup teriyaki sauce, ⅓ cup brown sugar and 3 minced garlic cloves in a large bowl. Add chicken to sauce and toss to combine.
Then add the chicken mixture to the slow cooker. I also add 8 oz sliced fresh mushrooms.
Cook on LOW for 4-6 hours or until chicken is cooked through. The sauce was very runny, so I added a cornstarch slurry to help thicken the sauce.
Cook rice to serve with chicken.
Once cooked, place some rice on a plate.
Serve chicken over hot cooked rice and spoon extra sauce on top if desired. I also like to serve with toasted sesame seeds.
