I stole this recipe for Grilled Lemon Garlic Chicken from a cookbook called Scratch. This easy to make grilled chicken recipe is great to make on a weeknight. Chicken is pounded out thin with a mallet. Lemon zest, lemon juice, olive oil and garlic are combined to marinate the chicken before grilling. The chicken quickly grills and tastes great. This recipe is great for a family or easily doubled for entertaining.

Using a meat mallet, pound 4 – 6 boneless, skinless, chicken breasts between 2 pieces of parchment paper to ¼ – ½ inch thickness.
In a small bowl add ½ cup olive oil. Grate the zest of 1 lemon into the bowl.
Juice the lemon and add the juice to bowl with 2 cloves garlic and salt to taste. Whisk to combine.
Place the chicken in a large resealable bag and pour the marinade over the chicken.
Let the chicken marinate while the grill warms up or you can marinate overnight. Prepare a grill or preheat grill pan over high heat.
Grill chicken for 5 minutes per side or until cooked through.
Serve warm.
Grilled Lemon Garlic Chicken
Ingredients
- 4 - 6 boneless skinless chicken breasts trimmed of fat
- ½ cup olive oil
- 1 lemon
- 2 cloves garlic chopped
- Salt

Transfer chicken to a bowl with oil and toss to combine. Finely grate the lemon zest over the chicken, juice the lemon and add the juice to bowl with garlic and salt; toss to coat.

Prepare a grill or preheat grill pan over high heat. Grill chicken for 5 minutes per side or until cooked through.
Recipe Notes
I marinate the chicken overnight. Make an extra batch of marinade: ½ cup olive oil, zest of 1 lemon (and juiced), 2 cloves minced garlic and salt. Brush chicken with extra marinade while grilling.
