White Cheddar Shells

This easy to make pasta side dish is a fancy version of macaroni and cheese. The cheese sauce starts with butter and flour in a saucepan. Then milk and pepper are added and cooked until thickened. Next three types of cheese are added: shredded white cheddar, provolone and Parmesan cheese. Once all the cheeses are melted, then cooked pasta shells are stirred into the sauce.

Ingredients

  • 3 ½ cups uncooked medium pasta shells
  • ¼ cup butter cubed
  • ¼ cup AP flour
  • 2 ½ cups milk
  • ¼ tsp pepper
  • 2 cups shredded white cheddar cheese or mozzarella
  • 4 slices white American cheese chopped (or provolone)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain and set aside.
  2. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk and pepper.
  3. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheeses until melted; stir in pasta.
