Steak and Mushroom Skewers

This easy to make grilling recipe is perfect for summer. Italian vinaigrette is mixed with Worcestershire sauce then cubed beef, zucchini and whole mushrooms are mixed in. The beef and vegetables marinate for 30 minutes. After marinating, thread beef, mushrooms and zucchini onto skewers. Then grill until done and brush with additional vinaigrette before serving.

Ingredients

  • ¼ cup Italian vinaigrette
  • 2 tbsp Worcestershire sauce
  • 12 oz beef top sirloin steak cut into 24 (1 inch) cubes
  • 24 medium whole mushrooms 12 ounces
  • 1 medium zucchini cut into 24 pieces
  • 1 medium green pepper cut into 24 pieces

Dipping Sauce:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 clove garlic minced
  • ¼ to ½ tsp dried rosemary
  • ¼ tsp salt

Instructions

  1. Combine vinaigrette and Worcestershire sauce in a small bowl; mix well. Reserve 2 tbsp dressing mixture. Combine beef, mushrooms and remaining vinaigrette in a large resealable bag. Seal bag, turn to coat. Marinate in refrigerator 30 to 60 minutes.
  2. Combine mayonnaise, sour cream, garlic, rosemary and salt in medium bowl; mix well. Cover and refrigerate until ready to serve.
  3. Soak eight 10-inch wooden skewers in water for 20 minutes. Prepare grill for direct cooking.
  4. Alternately thread beef, mushrooms, zucchini and pepper. (3 times per skewer)
  5. Grill skewers over medium-high heat 6 to 8 minutes or to desired doneness, turning occasionally. Before serving, brush with reserved 2 tbsp dressing mixture.
  6. Serve with sauce.

Recipe Notes

I omit the green pepper and use extra zucchini instead. Also I marinate the zucchini with the mushrooms and steak.
