Spinach Artichoke Party Cups

This easy to make appetizer is perfect for any gathering. Wonton wrappers are pressed into sprayed mini muffin pans and baked until light gold. Then artichoke hearts, spinach, shredded cheese, mayonnaise, garlic and Italian seasoning are mixed together. Next the baked wonton cups are filled with the spinach mixture and baked until the filling is warm.

Ingredients

  • 36 small wonton wrappers 2 ½ to 3 ½ inch squares
  • 1 can (8 ½ oz) artichoke hearts, drained and chopped
  • ½ package (10 oz) frozen chopped spinach, thawed and well drained
  • 1 cup shredded Monterey Jack Cheese
  • ½ cup grated Parmesan cheese
  • ½ cup mayonnaise
  • 1 clove garlic minced

Instructions

  1. Preheat oven to 300 F. Spray mini muffin pan lightly with nonstick cooking spray. Press one wonton wrapper into each cup; spray lightly with cooking spray. Bake about 9 minutes or until light golden brown. Remove shells from muffin pan and set aside to cool.
  2. Meanwhile, combine artichoke hearts, spinach, cheese, mayonnaise and garlic in a medium bowl; mix well.
  3. Fill wonton cups with spinach-artichoke mixture (about 1 ½ tsp). Place on baking sheet. Bake 7 minutes or until heated through. Serve immediately.

Recipe Notes

I also add Italian seasoning to the filling.
