This rice dish starts off by cooking onions, garlic and spinach in a large pot. Then uncooked rice and water is added to the same pot. The rice cooks in the water with the spinach, onions and garlic instead of adding the ingredients together after cooking. Greek style cooking for this rice dish allows all of the flavors to cook together to make the rice extra tasty.
After 20 minutes, the water was gone, but the rice was not cooked. I raised the heat to medium. I added another 3 cups water total (after adding 1 cup at a time then letting the water cook off before testing the rice and adding more water) and cooked for an additional 20 minutes.
