Slow Cooker Poor Man’s Stew

This slow cooker stew uses ground beef instead a beef roast for a more cost effective meal. Ground beef is cooked and drained, then added to a slow cooker. Diced potatoes, carrots, onions and garlic are added to the beef. Next in a bowl tomato paste, water, salt, pepper, onion powder and Italian seasoning is mixed together. Then the mixture is poured into the slow cooker and everything is stirred together. After several hours of cooking, frozen peas are added for the last hour of cooking.

Ingredients

  • 1 lb ground beef browned and drained
  • 1 ½ lbs russet or gold potatoes peeled and diced large
  • 3 carrots sliced thick
  • 1 yellow onion diced
  • 1 garlic clove minced or ½ tsp garlic powder
  • 6 oz can tomato paste
  • 2 cups water
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 tsp onion powder
  • 2 cups Italian seasoning
  • 1 cup frozen peas

Instructions

  1. Add the cooked ground beef, potatoes, carrots, onions and garlic to a 5-quart or larger slow cooker.
  2. In a small bowl whisk together the tomato paste, water salt, pepper, onion powder and Italian seasoning. Pour over beef mixture in slow cooker. Stir to combine.
  3. Cover and cook on LOW for 7 to 8 hours without opening the lid during the cooking time.
  4. Serve with buttered sandwich bread or rolls. Enjoy!

Recipe Notes

Add frozen peas during the last hour of cooking.
