Slow Cooker Creamy Chicken Tetrazzini

Chicken is placed in a slow cooker then topped with melted butter, dry Italian dressing mix, onions and garlic. Next chicken broth and cream of chicken soup are whisked together and poured on top. Cubed cream cheese is placed on top before closing the slow cooker and cooked for several hours. After cooking the chicken is shredded. Then cornstarch is added to the slow cooker. The chicken is returned to the slow cooker with cooked fettucine before serving.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • ¼ cup butter melted
  • 1 package Italian Salad Dressing mix 1 oz
  • 1 onion diced
  • 3 tsp minced garlic
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can (15 oz) chicken broth
  • 8 oz cream cheese
  • ¼ cup cornstarch
  • 16 oz fettucine noodles cooked according to package
  • Parsley

Instructions

  1. Spray slow cooker with non-stick cooking spray.
  2. Place chicken in bottom of the slow cooker.
  3. Pour melted butter on top of the chicken. Sprinkle Italian dressing mix on top of chicken.
  4. Top with diced onion and garlic.
  5. In a small bowl whisk together cream of chicken soup and chicken broth, then pour over the chicken.
  6. Cut cream cheese into small cubes and place on top.
  7. Cover and cook on HIGH 3 to 4 hours.
  8. Remove chicken from slow cooker and shred or dice; set aside.
  9. Add cornstarch to the slow cooker and whisk until smooth.
  10. Add the shredded chicken and cooked fettucine to the sauce in the slow cooker and mix until combined.
  11. Garnish with parsley and serve.

I add sautéed mushrooms when I add the noodles.
