Slow Cooker BBQ Chuck Roast

The slow cooker does all the work for these sandwiches. A beef roast is seasoned with salt and pepper then placed in a slow cooker. Your favorite barbecue sauce is mixed with chopped onion, garlic, beef broth, Worcestershire sauce, paprika and brown sugar. Then the sauce is poured over the roast. Next the beef is cooker for several hours until it pulls apart easily with forks. After shredding the roast it is stirred with the sauce from the crockpot. The meat is served on fresh buns.

Ingredients

  • 3-4 lbs beef chuck roast
  • 1 cup barbecue sauce
  • 1 cup beef broth
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Buns for serving

Instructions

Preparation

  1. Trim any excessively thick external fat but leave some for flavor. Pat the roast dry and season lightly with 1 teaspoon of salt and 1/2 teaspoon of pepper.
  2. In a medium bowl, combine the barbecue sauce, chopped onion, minced garlic, beef broth, Worcestershire sauce, smoked paprika, and brown sugar. Stir until smooth.

Cooking

  1. Place the beef chuck roast in the crockpot and pour the sauce mixture evenly over the top.
  2. Cover and cook on LOW for 8–10 hours or on HIGH for 4–6 hours, until the roast pulls apart easily with two forks.

Finishing

  1. Remove the roast to a cutting board, shred with two forks, and return the meat to the crockpot.
  2. Stir the shredded beef into the cooking juices; if the sauce is too thin, leave the lid off on high for 15–30 minutes to reduce and thicken. Taste and adjust with salt and pepper.
  3. Spoon generous portions onto buns and top as desired.
