Skinny Funfetti Cake Cookies

These quick and easy cookies are made with 3 ingredients, including funfetti cake mix. These light cookies can be easily adjusted for the holidays when stores sell different colors of funfetti cake mixes such as red/blue, green/red or pastels.

Ingredients

  • 18.9 oz box Funfetti cake mix
  • ½ cup fat-free vanilla yogurt
  • 2 eggs

Instructions

  1. Preheat oven to 375 F.
  2. In a medium bowl, combine funfetti cake mix, yogurt and 2 eggs and mix until all clumps are gone.
  3. Drop by tablespoonfuls onto a cookie sheet greased or covered in tinfoil and bake for about 10 to 12 minutes, until cookies are slightly browned on the bottoms.

Recipe Notes

I don’t know where this blogger shops but I can’t find an 18.9 oz box of Funfetti cake mix, I only can find 15.25 oz boxes. Also some brands also call it sprinkle cake or birthday cake mix, not all brands call it Funfetti cake mix. So after LOTS of trial and error this is how I can make the cookies. And don’t try to use Greek yogurt it gives the cookies a weird taste.

To make these cookies using 15.25 oz boxes, in a bowl add: 2 boxes (15.25 oz each) Funfetti cake mix, ¾ cup plus 1 tbsp fat-free vanilla yogurt and 3 eggs.

Then follow the directions above. Rotate the cookie sheets as they cook in the oven. I use the upper racks and cook for 5 minutes, then switch the cookie sheets, cook for 5 minutes more, then switch again. Depending on how dark your cookie sheet is, the cookies may be ready closer to 12 minutes, lighter or shiny cookie sheets make take closer to 15 minutes. If you want to use only one 15.25oz cake box you can, but it involves way more math and having to use 1 + a little less than 2/3 egg. Trust me using the 2 box method is easier and the extra cookies don’t go to waste! Yield: 42 cookies
