This sheet pan meal is perfect for a weeknight dinner. A baking sheet is lined with foil and sprayed with non stick cooking spray. Then Parmesan cheese, Italian seasoning and bread crumbs are mixed together in a bowl. Next pork chops are dipped in melted butter, then in the bread crumb mixture before placing on the baking sheet. Potatoes are cut into smaller pieces and tossed with olive oil and placed around the pork chops. The pork and potatoes are seasoned with salt and pepper before baking.

Ingredients
½cupshredded Parmesan cheese
1tspItalian seasoning
¾cupItalian breadcrumbs
½cupbutter
6boneless pork chops
4cupsfingerling potatoes
1tbspolive oil
Salt and pepper
Instructions
Preheat oven to 400 F.
Cover a sheet pan with foil and spray with non stick cooking spray.
In a medium bowl, combine Parmesan cheese, Italian seasoning and bread crumbs.
Melt butter in a separate bowl.
Dip each pork chop in butter then coat in crumb mixture and place on prepared baking sheet. Continue until all pork chops are coated and on the pan.
Cut potatoes in half and toss in olive oil.
Place potatoes on pan around the pork chops. Season pork chops and potatoes with salt and pepper to taste.
Bake for 35-40 minutes or until pork chops are cooked through and potatoes are lightly browned.

Any potatoes can be used, just chop into bite size pieces.
