Red Velvet Waffles with Cream Cheese Glaze

These delicious waffles can be a delicious breakfast or dessert treat, perfect for the Valentine’s Day. First a glaze is made with cream cheese, butter, powdered sugar, vanilla and milk. Then flour, sugar, baking powder, cocoa and salt are mixed together. Buttermilk, eggs, vanilla, vinegar & red food coloring are mixed together before being added to the dry ingredients. Next the batter is cooked in a waffle maker until crisp. The cooked waffles are served with the cream cheese glaze.

Ingredients

Waffles

  • 2 cups flour
  • ¼ cup sugar
  • 1 tbsp plus 1 tsp baking powder
  • 2 tbsp cocoa powder
  • ½ tsp salt
  • 1 ¾ cups buttermilk
  • cup butter melted and cooled
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ tsp apple cider vinegar
  • 2 tbsp red food coloring

Glaze

  • 4 oz cream cheese softened
  • 4 tbsp butter softened to room temperature
  • 1 ½ cups confectioners sugar
  • 1 tsp vanilla extract
  • ½ cup whole milk

Instructions

  1. Whip the cream cheese and butter together in a large bowl with an electric mixer until smooth. Carefully beat in the confectioners’ sugar, then add the vanilla and milk. Beat until the glaze is smooth. Set aside.
  2. Whisk the flour, sugar, baking powder, cocoa and salt in a large bowl, set aside. In a separate medium bowl, beat the buttermilk, melted butter, eggs, vanilla and vinegar together until smooth, then stir in the red food coloring. Add the buttermilk mixture to the dry ingredients and whisk until smooth.
  3. Heat your waffle iron according to the manufacturer’s instructions. Spray with nonstick cooking spray. Pour batter into the waffle maker. Close and cook until the waffle is deep red and crisp, about 3 minutes.
  4. Repeat with remaining batter. Serve waffle drizzled with cream cheese glaze and chopped pecans.
