This tasty fall treat is perfect for Thanksgiving. The bars start with pumpkin, eggs, sugar and oil. Then flour, baking powder, cinnamon, salt and baking soda are added to the wet ingredients. Next the mixture is spread into a baking pan and baked. After cooling a frosting is made with cream cheese, butter, powdered sugar and vanilla.

4eggs
1 ⅔cupsgranulated sugar
1cupvegetable oil
15ozcan pumpkin puree
2cupssifted AP flour
2tspbaking powder
2tspground cinnamon
1tspsalt
1tspbaking soda
Icing
8ozpackage cream cheesesoftened
½cupbuttersoftened
2cupsifted powdered sugar
1tspvanilla extract
Instructions
Preheat oven to 350 F.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.
In a separate bowl stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
Spread the batter into a greased 13x10 baking pan. Bake for 30 minutes. Let cool completely before frosting.
Icing
Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin in pan. Cut into bars.
