Baby potatoes are tossed with olive oil, salt and pepper then placed on a baking sheet. Then the potatoes start to bake in the oven. In a small bowl Worcestershire sauce, ketchup, soy sauce, brown sugar, olive oil, minced garlic and apple cider vinegar are mixed together. Next pork chops are rubbed with the mixture and placed on the baking sheet. After baking for 15 minutes, the pork chops are flipped over and broiled to caramelize before serving.

Ingredients
Rub
1tspWorcestershire sauce
2tbspketchup
1tbspsoy sauce
2tbspbrown sugar
1tbspolive oil
1garlic cloveminced

Chops and Potatoes
4pork chops/cutlets
1 ½lbsbaby potatoesor larger ones cut in half
1tbspolive oil
Salt and pepper
Instructions
Preheat oven to 430 F.
Toss potatoes with olive oil, sprinkle with salt and pepper. Scatter on a baking tray.
Place in oven for 15 minutes.
Meanwhile mix the rub ingredients in a small bowl.
Slather the pork on both sides with rub, reserving some rub for basting.
Take the tray out of the oven. Toss the potatoes and then push them to the edge.
Place pork on tray. Bake for 15 minutes.
Remove tray from oven, change to broil.
Flip pork, spoon over reserved rub and dab on sides. Broil for 7 to 10 minutes until pretty well caramelized.
Remove from the oven. Use a brush to get the golden juices off the tray and dab it on the pork, for flavor and color. Add back to the oven for a few minutes.
Serve, scraping the juices on the tray onto the pork, then garnish with parsley.
Recipe Notes
To make the potatoes smashed: Par boil the potatoes for 20 to 25 minutes. Place on tray, smash with the bottom of a glass. Continue with recipe. When the pork is added to the tray, sprinkle the potatoes with some shredded cheese.
