This tasty pasta salad is perfect to pair with any grilled recipe. Cooked orzo pasta is combined with cucumbers, tomatoes, chickpeas, red onion, parsley and feta cheese. Then a dressing is made with olive oil, lemon juice, red vinegar, Dijon mustard and spices. Next the dressing is poured over the pasta mixture. After tossing everything together the salad is served room temperature or cold.

8ozdried orzo pasta cooked in salted waterthen drained and cooled
1 ½cupcucumber diced
1cupcherry tomatoeshalved
1cupchickpeas
¼cupminced red onion
½cupfeta cheesecrumbled
¼cupchopped fresh parsley
6tbspolive oil
1tbsplemon juice
1tbspred wine vinegar
1tspDijon mustard
¼tspgarlic powder
¼tspdried oregano

Instructions
Place the orzo pasta, cucumber, tomatoes, chickpeas, red onion, parsley and feta cheese in a large bowl.
In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano, salt and pepper.
Pour the dressing over the pasta mixture. Toss to coat, then serve.
