One-Pan No Peek Chicken & Rice

This tasty dinner is a one-pan meal. Boxed rice mix is mixed with cream soups, garlic powder and water before being poured into a casserole dish. Chicken is placed on top of the rice mixture, and then dried onion soup mix is sprinkled on top of the chicken and rice. Then the dish is covered in foil and baked.

Ingredients

  • 5 boneless, skinless chicken breasts
  • 2 boxes (7 oz) each Zatarain’s Long Grain & Wild Rice Mix
  • 1 can (10.25 oz) cream of celery soup
  • 1 can (10.25 oz) cream of mushroom soup
  • ¼ tsp garlic powder
  • 1 ¼ can water soup can
  • 1 box Lipton Onion Soup Mix 2 packets

Instructions

  1. Preheat oven to 350 F. Combine rice mix, cream of celery soup, cream of mushroom soup, garlic powder and water in a 9x13 baking dish. Mix well.
  2. Place chicken evenly on top of rice mixture. Sprinkle with onion soup mix. Cover tightly with aluminum foil and bake 1 hour 45 min. Remove from oven and let rest 5 minutes.
  3. Don’t open the oven and don’t remove the foil.

Recipe Notes

If you use smaller pieces of chicken or thinner cuts, the cooking time will be less. When I used smaller pieces of chicken I only cooked the chicken for 1 hour.
