nstant Pot Three Envelope Pot Roast Sliders

These delicious sliders come together in a pressure cooker. First a mixture of salsa, dry onion soup mix, Italian dressing mix and Au Jus mix are stirred together in a bowl. Then a roast is placed in a pressure cooker and the salsa mixture and some water are poured on the roast. The roast is cooked in the pressure cooker then the meat is shredded and stirred with the sauce. Next Hawaiian rolls are sliced and topped with cheese and toasted in the oven before adding the meat.

Ingredients

  • 1 cup salsa
  • 1 oz dry onion soup mix
  • 1 oz dry Italian salad dressing mix
  • 1 oz dry Au Jus mix
  • 3 lbs beef roast
  • 1 cup water
  • 12 King’s Hawaiian Rolls
  • 6 Swiss cheese slices

Homemade sauce

  • ¼ cup sour cream
  • 2 tbsp chili sauce
  • 1 ½ tsp creamy horseradish sauce

Instructions

  1. In a medium size bowl whisk together salsa, dry onion soup mix, Italian dressing mix and Au Jus mix.
  2. Place roast inside the Instant pot.
  3. Pour the salsa mixture on top of the roast.
  4. Pour in the water (don’t mix with the salsa mixture).
  5. Place the lid on the Instant Pot and seal.
  6. Press MANUAL pressure cook and set timer for 60 minutes (or 20 minutes per pound, depending on the size of your roast).
  7. When the timer is done, let the pressure do a NATURAL RELEASE (it will take at least 20 minutes, but the roast can sit in there for a couple of hours to make sure it is super tender).
  8. Remove the lid and shred the roast with 2 forks. Mix the shredded beef in the liquid in the Instant Pot.
  9. Serve the roast on Hawaiian rolls with a piece of Swiss cheese and a spoonful of the homemade creamy sauce on top.
  10. To melt the cheese and toast the rolls before serving, cut the rolls in half and place a piece of cheese on top of each half and place under broiler for a minute.
