Mini Muffins Bread Pudding

This quick and easy breakfast is made in an air fryer. Mini muffins are cut into 1 inch pieces. Then the muffin pieces are mixed with milk and eggs and left to sit to absorb the milk mixture. Next the mixture is split between 4 ramekins, then placed in a preheated air fryer. The ramekins cook for 10 minutes until browned before serving.

Ingredients

  • 1 ½ cups milk
  • 2 eggs
  • 4 packages (2 oz each) mini muffins, cut into 1 inch pieces

Instructions

  1. Spray 4 (6 oz) ramekins with non stick cooking spray.
  2. Beat milk and eggs in a medium bowl until blended. Add the muffins, stir to coat. Let stand 10 to 15 minutes to allow muffins to absorb milk mixture.
  3. Divide mixture evenly among the prepared ramekins.
  4. Preheat air fryer to 330 F.
  5. Cook for 8 to 10 minutes or until lightly browned. Sprinkle with powdered sugar and serve with blueberries if desired.

This recipe can be substituted with any baked goods or with banana bread, chocolate chip or cinnamon roll muffins.
