This recipe for meat loaf is lighter than more traditional recipes. Oats are mixed with the meat instead of breadcrumbs. Onions, Worcestershire sauce and spices are also mixed in before adding cooked spinach. A glaze is made with ketchup, brown sugar and cider vinegar and is spread on the meat loaf before baking. The cooked meat loaf is a tasty twist on a regular recipe.

Ingredients
Meat loaf:
5ozpackage fresh baby spinach
2tbspwater
1lbground sirloin
½lbground veal
½lbground pork
1 ½cupsfinely chopped onion
2tbspWorcestershire sauce
1 ½tspdry mustard
1tspsalt
½tspdried thyme
½tspground black pepper
1large egg
1large egg white
½cupuncooked old-fashioned rolled oats
Cooking spray
Glaze:
¼cupketchup
2tbspbrown sugar
2tbspcider vinegar
Instructions
Preheat oven to 450 F.
Heat a large sauté pan over medium heat; add spinach and 2 tbsp water to pan. Cover and steam 2 minutes or until spinach wilts. Remove pan from heat; cool 5 minutes.
Combine ground sirloin, veal, pork and next 8 ingredients (through egg white) in a large bowl; gently mix just until combined. Add in spinach and oats; gently mix until blended.
Coat a 9x13 baking dish with cooking spray. Shape meat mixture into 9x5 inch loaf.
Prepare glaze: combine ketchup, brown sugar and vinegar. Stir with a whisk until blended. Brush glaze over meat loaf. Bake at 450 F for 15 minutes. Reduce oven temperature to 350 F. Bake an additional 45 minutes or until done; let stand 10 minutes before slicing.
