Marry Me Pasta

This delicious pasta is easy to make and quick enough for a weeknight meal. Onion and garlic are sautéed in olive oil. Then butter, tomato paste, flour, Italian seasoning, salt and pepper are added to the pan. After cooking for a few minutes, chicken stock and heavy cream are added with chopped sun-dried tomatoes, basil and Parmesan cheese. Lastly, pasta water, more salt, pepper, Italian seasoning & garlic powder are added with cooked pasta before serving.

Ingredients

  • 1 lb spaghetti
  • 2 tbsp olive oil
  • 1 small onion chopped
  • 4 garlic cloves minced
  • 2 tbsp Italian seasoning
  • 2 tbsp tomato paste
  • 2 tbsp butter
  • 2 tbsp flour
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 2 to 3 tbsp sun-dried tomatoes chopped
  • 1 tbsp oil from sun-dried tomatoes jar
  • ½ cup Parmesan cheese
  • 3 tbsp basil shredded
  • Salt and pepper to taste
  • 2 tbsp garlic powder

Instructions

  1. Cook the pasta according to package, reserving 1 cup pasta water.
  2. Heat the olive oil in a large pan and sauté the onion until it’s soft. Add the garlic and cook for 1 minute.
  3. Then add the butter, tomato paste, flour, Italian seasoning and lightly season with salt and pepper.
  4. Stir it all together and let it cook over medium high heat for 2 minutes.
  5. Next, stir in chicken stock and cream.
  6. Add the sun-dried tomatoes and little bit of oil from the jar. Stir in the basil and Parmesan cheese.
  7. Finally, add 1 ladle of cooked pasta water and add more salt, pepper, Italian seasoning and garlic powder. Add in the cooked pasta and toss it in the sauce until it is evenly coated.
  8. Serve warm and enjoy!
