Maple Pecan Granola

This easy to make granola recipe makes enough for a crowd. Old fashioned oats, pecans, cinnamon, allspice and salt are mixed together in a large bowl. In a separate bowl maple syrup, vegetable oil and vanilla are whisked together. Then the maple syrup mixture is poured over the oat mixture. Next everything is mixed together before spreading onto a large sheet pan. The granola is baked for 40 minutes, stirring every 10 minutes. After cooling completely dried fruit or mini chocolate chips are stirring into the granola.

Ingredients

  • 4 cups old-fashioned rolled oats
  • 1 ½ cups pecans roughly chopped
  • 1 tsp ground cinnamon
  • ¼ tsp ground allspice
  • ¼ tsp salt
  • ¾ cup pure maple syrup
  • cup canola oil
  • 1 tsp vanilla extract
  • cup dried cranberries or mini chocolate chips

Instructions

  1. Preheat oven to 300 F. Coat a large sheet pan with cooking spray.
  2. Combine the oats, pecans, cinnamon, allspice and salt in a large bowl.
  3. Combine the maple syrup, oil and vanilla in a separate bowl. Add the maple syrup mixture to the oat mixture and stir well to combine. Spread the mixture in an even layer on the sheet pan.
  4. Bake, stirring every 10 minutes, until the oats are lightly browned, 40 to 45 minutes. Remove from the oven and stir in the cranberries or chocolate chips. Cool completely and store in an airtight container.
