Italian Marinated Grilled Chicken

This grilling recipe is a tasty option for Memorial Day grilling. Olive oil, vinegar, lemon juice, garlic powder, oregano, basil, onion powder, red pepper, salt and pepper are whisked together. Then chicken is added to the marinade and refrigerated for several hours. Next the chicken is removed from the marinade and grilled on each side until fully cooked.

Ingredients

  • 6 Chicken breasts trimmed

Easy Marinade Italian Dressing

  • ¾ cup olive oil
  • ¼ cup red or white wine vinegar
  • 1 tsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp onion powder
  • ½ tsp crushed red pepper
  • ¾ tsp salt
  • ½ tsp black pepper

Instructions

  1. Whisk the dressing ingredients together in a small bowl.
  2. Place chicken in a Ziploc bag with the dressing. Seal the bag, squeezing out all of the air. Let the chicken marinade for 1 hour or up to 12 hours.
  3. Grill or sauté your chicken depending on preference.

Grill

  1. Remove chicken from the bag and place on a hot grill over medium heat. Grill for 5 to 7 minutes on each side or until done.

Stovetop

  1. Add 2 tbsp olive oil or another cooking oil to a skillet. Heat the oil over medium high heat. Add each chicken breast to the skillet in a single layer. Cook for 5 minutes. Flip the chicken and cook for another 5 minutes. (chicken should be firm and the juices should run clear.)
