Italian Baked Breaded Zucchini

This vegetable recipe is to make and a delicious side dish. Breadcrumbs, Parmesan cheese, parsley, salt, pepper & garlic are mixed with olive oil. Then zucchini is cut into sticks and tossed with the breadcrumb mixture. Next the coated zucchini sticks are placed on a baking sheet. After drizzling with olive oil the zucchini is baked until crispy.

Ingredients

  • 3 medium zucchini
  • 3 to 4 tbsp breadcrumbs
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp parsley
  • ΒΌ tsp salt
  • 1 to 2 dashes of black pepper
  • 1 clove of garlic minced
  • 3 to 4 tbsp olive oil divided

Instructions

  1. Preheat oven to 400 F. Drizzle cookie sheet with 1 tbsp olive oil.
  2. In a medium bowl combine the breadcrumbs, Parmesan cheese, parsley, salt, pepper, garlic and 1 tbsp olive oil.
  3. Trim and cut the zucchini into sticks (2 inch pieces). Rinse and drain but do not dry.
  4. Toss zucchini pieces with bread crumb mixture. Place the sticks on the prepared cookie sheet and sprinkle with remaining breadcrumb mixture.
  5. Drizzle with 1 to 2 tbsp of olive oil. Bake for 15 to 20 minutes. Sprinkle with salt. Serve immediately.
