Instant Pot Honey Chicken

This chicken recipe is a quick and tasty entrée. Chopped chicken is coated in a batter made of flour, corn starch, baking powder, salt, and water. Then the chicken is cooked in an Instant Pot in oil on the sauté function. The chicken is removed from the pot and drained on paper towels. Next a sauce is made with ketchup, sugar, honey, soy sauce and water. After whisking the sauce together, the sauce is placed in the Instant Pot with the chicken and pressure cooked for four minutes.

Ingredients

  • Chicken breast tenders 6 to 7 sliced
  • ¼ cup sesame oil

Batter

  • ½ cup flour
  • ½ cup corn starch
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup water

Sauce

  • ½ cup tomato ketchup
  • 2 tbsp sugar
  • 3 tbsp honey
  • 1 tbsp soy sauce
  • 2 tbsp water

Instructions

  1. Cut chicken in bite size pieces. Set aside.
  2. In a small bowl add all of the sauce ingredients, mix to combine. Set aside.
  3. In another bowl, add all of the batter ingredients except the water to a bowl, whisk to combine. Slowly add the water to make a semi thick batter.
  4. Dip each chicken piece in batter and then place on a parchment lined baking sheet.
  5. Place the oil in the Instant Pot and set to sauté. Place the chicken in the oil once bubbling hot.
  6. Cook the chicken in a single layer. Turn the chicken over to cook evenly. Cook the chicken until golden brown.
  7. Remove the chicken and place on a paper towel covered plate and set aside.
  8. Wipe clean the insert on the Instant Pot.
  9. Add the sauce into the Instant Pot and add the chicken.
  10. Toss to combine.
  11. Close the lid and seal the valve.
  12. Set the lid to manual for 4 minutes.
  13. Once the timer sounds, open the valve. Serve hot.
