Instant Pot Crack Chicken Pasta

This pasta recipe is another great pressure cooker recipe. Chopped chicken is cooked with a packet of dry ranch dressing mix on the sauté function. Then dry pasta, chicken broth and water are added to the pot. The pressure cooker is sealed and then cooks for only 4 minutes. After releasing the steam, shredded cheese is mixed and the pasta sits for a few minutes for the sauce to thicken. Altogether this tasty meal is ready in less than 20 minutes.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite size pieces
  • 2 tbsp olive oil
  • 1 package (1 oz) Original Ranch dressing mix
  • ¼ cup chopped cooked bacon
  • 8 oz package cream cheese
  • 1 lb dry penne pasta
  • 3 cups low-sodium chicken broth
  • 2 cups water
  • 2 cups (8 oz) shredded cheddar cheese

Instructions

  1. Preheat instant pot on Sauté; add oil, chicken and ranch packet, stirring to coat. Cook chicken 2-3 minutes.
  2. Add pasta, broth and water to pot.
  3. Close lid, lock, select Manual setting for 4 minutes. Cook pasta until time is up, then quick release steam and open pot.
  4. Stir in cream cheese, cheddar cheese and cooked bacon until combined; let pasta set for 5 minutes to thicken. Serve immediately.

Recipe Notes

I omitted the bacon because I didn’t have any, still tasted great!
