Individual Sausage, Egg and Cheese Breakfast Casseroles

These delicious individual breakfast casseroles can be assembled ahead of time for a quick and easy breakfast. A loaf of French bread is cubed and placed in ramekins. Then breakfast sausage is cooked with spices and crumbled. Next the sausage is added to the ramekins with shredded cheese. Eggs and milk are whisked together and poured over the cheese. The ramekins are baked until the eggs are set. Or they can be refrigerated and baked the next day.

Ingredients

  • 3 to 4 cups day old French Bread cubed
  • 1 lb breakfast sausage
  • ½ onion diced
  • 5 cloves garlic minced
  • 1 tsp garlic powder
  • ½ tsp dry mustard
  • Salt and pepper
  • 1 cup shredded cheddar cheese
  • 12 eggs
  • 1 cup whole milk

Instructions

  1. Preheat oven to 350 F and spray each ramekin with cooking spray and then set on large baking sheet.
  2. Add a few cubes of bread to each ramekin and set aside.
  3. Next heat a tbsp of olive oil in a large non-stick skillet over medium high heat. Add breakfast sausage and cook, breaking up with the back of a spoon, until fully cooked.
  4. Add onion, garlic and spices to the sausage and cook another few minutes.
  5. Spoon the sausage mixture on top of the cubed bread in the ramekins. Then add a few tablespoons of cheese to each ramekin.
  6. Whisk the eggs and milk together, the pour over the sausage mixture.
  7. Bake for 30 to 35 minutes, or until the eggs are set.
  8. Top with chopped chives and enjoy!

Recipe Notes

If making ahead: assemble and refrigerate before baking. Bake on baking sheet the following morning.
