Honey BBQ Meatloaf

For this recipe of Honey BBQ Meatloaf ground beef, bread crumbs, honey, barbecue sauce and other ingredients are mixed together. The meat mixture is formed in a loaf. Additional honey, barbecue sauce and Worcestershire sauce is mixed together and spread on top while baking. A soft, delicious meatloaf is the final result, no gravy needed!

Ingredients

  • 1 lb ground beef 80% lean
  • ½ cup seasoned bread crumbs Panko
  • 2 ⅔ tbsp Worcestershire sauce divided
  • 1 tbsp spicy brown mustard
  • ¾ cup barbecue sauce divided
  • 2 tbsp honey divided
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. In a large bowl, use your hands to mix together the ground beef, bread crumbs, 2 tbsp Worcestershire sauce, mustard, ½ cup barbecue sauce, 1 tbsp honey, salt and black pepper. Shape into a long thick log and place in 8x14” loaf pan sprayed with non-stick spray.
  2. In a small bowl, whisk together the remaining ¼ cup barbecue sauce, 1 tbsp honey and 2 tsp Worcestershire sauce. Spread half of the mixture evenly all over the meatloaf. Reserve the other half for serving.
  3. Bake 45 minutes at 350F. Slice and drizzle with honey barbecue sauce.

Recipe Notes

I doubled this because I like leftover meatloaf sandwiches the next day. 2 eggs were added to the doubled recipe to help bind the mixture together, it was very loose. Maybe my barbecue sauce was too watery, but the meat mixture would not even stick together to form a loaf. Even after adding the eggs, the cooked sliced were not firm. They were fully cooked but crumbled easily on the plate. Maybe this is why the posted picture on the website is only of the whole meatloaf in the pan. Tricky! Since I doubled the recipe, I cooked this for 1 hour, I also started to add some of the sauce the last ten minutes of cooking so the sauce would cook and thicken on the meatloaf.
