Homemade Strawberry Ice Cream

This homemade ice cream is a tasty summer treat! Strawberries are diced then mixed with honey, sugar and lemon juice. The strawberries are left to sit for about twenty minutes. Next the strawberry mixture is mashed and mixed with heavy cream, half-and-half and vanilla. The mixture is poured into an ice cream maker and churned. Then the ice is frozen for a few hours until thickened.

Ingredients

  • 1 ½ cups strawberries hulled and diced
  • 2 tbsp honey
  • ½ cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • ½ cup half and half
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, mix strawberries, honey, sugar and lemon juice. Allow to sit for 15 to 20 minutes, or until the strawberries have released their juices.
  2. Mash the mixture with a potato masher or pastry cutter until there are no longer any large pieces.
  3. To the strawberries, mix heavy cream, half-and-half and vanilla. Stir just until combined.
  4. Pour the mixture into your ice cream maker, churning about 15 to 20 minutes. Freeze in an airtight container for 3 to 4 hours to thicken slightly.
  5. Allow the ice cream to sit at room temperature for about 5 to 10 minutes to soften before serving.
