Sprinkle yeast over warm water in a large bowl. Let it sit for 3 minutes. Add in the flour, salt and sugar. Mix using a spoon just it comes together.

Add in the toppings and Parmesan cheese and combine well. The dough will be tacky. Dust with a bit more flour if it feels too tacky. Let rise for about 1 hour, then put in the refrigerator to continue rising for another hour.

Take the dough out of the refrigerator. Flour the countertop, then roll the dough into a rectangle about 11x18”.

Sprinkle mozzarella cheese on top. Then, fold into thirds to yield 11x6 loaf. Seal the sides so cheese is not exposed. Let your loaf rest while you preheat the oven to 450 F.

Bake the bread, either on a pizza stone or baking sheet, for 30 to 35 minutes, until golden brown.

After baking for 15 minutes, add a piece of foil to the top of the loaf.

When 3 minutes are left in the baking time, lightly brush bread with olive oil.

Rest on a wire rack to cool slightly before slicing.
