Halloween Cream Cheese Swirl Brownies

Sugar, flour, cocoa powder, salt and baking powder are mixed together in a bowl. Then eggs, oil and vanilla are whisked in. Some of the batter is reserved before spreading the rest of the batter into a baking dish. Next cream cheese, sugar, egg and vanilla are blended together with orange food coloring before spreading on top of the brownie batter. The reserved brownie batter is dropped on top and swirled into the batter. Then the brownies are cooked and cooled before slicing.

Ingredients

Brownie Layer

  • 1 cup granulated white sugar
  • ½ cup AP flour
  • ½ cup cocoa powder
  • ½ tsp salt
  • ¼ tsp baking powder
  • 2 large eggs
  • cup vegetable oil
  • 1 tsp vanilla extract

Cream Cheese Layer

  • 8 oz cream cheese at room temperature
  • ¼ cup granulated white sugar
  • 1 large egg
  • ½ tsp vanilla
  • Orange food coloring

Instructions

  1. Preheat oven to 350 F. Line a 8x8 baking dish with parchment paper or foil and spray with non-stick cooking spray. Set aside.

Brownie Layer

  1. In a medium bowl add the sugar, flour, cocoa powder, salt and baking powder.
  2. In another bowl add the eggs, oil and vanilla. Mix with a fork until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix with a spatula until just combined.
  4. Reserve ¼ cup batter for the swirls then pour the remaining batter into the prepared baking dish.

Cream Cheese Layer

  1. In a medium bowl, add the cream cheese, sugar, egg and vanilla. Blend until smooth.
  2. Add in the orange food coloring and stir to combine.
  3. Gently spread the cream cheese layer on top of the brownie batter.
  4. Drop tablespoons of the reserved brownie batter on top and gently swirl with a knife or skewer.
  5. Bake for 30 to 35 minutes or until set. Remove and let cool completely before slicing.
  6. Store leftovers covered in the fridge for up to 4 days.
