Green Cake Pops

These cake pops are perfect for St. Patrick’s Day! Green food coloring is added to vanilla cake batter before baking. The cake is cooled and then crumbled into a large bowl. Vanilla frosting is added until the cake crumbs are moist enough to be rolled into balls. Then the cake balls are placed on a lined baking sheet and refrigerated. Next white chocolate is melted and stirred until smooth. The cake balls are dipped into the chocolate until coated, then topped with green sprinkles.

Ingredients

  • 1 box vanilla cake mix
  • Food coloring
  • ½ cup vanilla icing
  • 2 cups white chocolate chips or almond bark

Instructions

  1. Make the cake according to the package directions, stirring in the food coloring until the desired shade is reached before baking.
  2. Bake and cool cake. Crumble cake into a large bowl.
  3. Add the vanilla frosting 1 tablespoon at a time until the cake is just moist enough to be rolled into about 40 (1 inch) smooth balls.
  4. Place the cake balls on a sheet pan in the refrigerator for at least 1 hour.
  5. Place the white chocolate in a microwave safe bowl and cook at 50 % power for 1 minute. Stir until smooth. If not melted, heat on 15 second intervals, stirring in between, until melted and smooth.
  6. Dip the end of a lollipop stick into the melted chocolate and then insert into the cake ball about half way. Dip the cake ball into the white chocolate and turn to coat.
  7. Decorate and enjoy once the chocolate is hard.
