Garlic Parmesan Chicken

This delicious chicken can be grilled, cooked in a skillet or baked in the oven. A perfect recipe when it’s nice enough to grill outside or if it’s too hot the chicken can be cooked inside. First a marinade is made with olive oil, lemon juice, honey, garlic, Italian seasoning, paprika and Parmesan cheese. Then the chicken is coated in the marinade and refrigerated until ready to cook. Next the chicken is cooked and sprinkled with Parmesan cheese before serving.

Ingredients

Marinade:

  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 4 garlic cloves minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese

Chicken:

  • 1 ½ to 2 lbs boneless skinless chicken breasts
  • Parmesan cheese for topping
  • Parsley for garnish

Instructions

Marinate the chicken:

  1. In a bowl, whisk together the olive oil, lemon juice, honey, garlic, seasonings and Parmesan cheese.
  2. Add the chicken and toss to coat. Cover and marinate for at least 30 minutes or up to 4 hours for max flavor.

Preheat grill:

  1. Heat grill to medium high. Oil grates lightly to prevent sticking.

Grill the chicken:

  1. Remove chicken from the marinade, letting the excess drip off. Grill 5 to 7 minutes per side or until internal temperature reaches 165 F and juices run clear.

Finish with cheese:

  1. In the last 1 to 2 minutes of grilling, sprinkle with more cheese over the top to let it melt slightly. Remove from the grill, rest for 5 minutes. Garnish with fresh parsley and extra cheese if desired.

Note: Chicken can be cooked in a skillet or baked at 400 F for 20 to 25 minutes.
