Easy Slow Cooker Breakfast Potatoes

These potatoes are perfect for the holiday season. The potatoes cook in the slow cooker overnight and enjoyed in the morning. Chopped potatoes and onions are placed in a slow cooker then sprinkled with paprika, oregano, garlic powder, salt and pepper. Next melted butter is poured over the potatoes and everything is stirred together. The potatoes cook for several hours and ready to serve for a delicious breakfast side dish.

Ingredients

  • 3 lbs mini potatoes halved
  • 1 large onion halved
  • ¼ cup butter melted
  • 1 ¼ tsp paprika
  • 1 ¼ tsp dried oregano
  • ¼ tsp garlic powder
  • tsp cayenne pepper
  • Salt
  • Pepper

Instructions

  1. Combine all seasonings together.
  2. Place the potatoes and onions into a 6-quart slow cooker. Sprinkle with seasonings and pour the butter on top. Mix well until combined.
  3. Cover and cook for 6 to 8 hours on LOW heat, or 4 to 6 hours on HIGH heat. (If using high heat, stir potatoes every so often so the ingredients don’t burn.)
  4. Sprinkle with fresh oregano if desired and serve!
