Easy Mexican Salsa Rice

This rice recipe is easy to make, a quick side dish to serve with any Mexican dish. Instant rice is the secret to making this recipe so easy. First instant rice, water, a packet of enchilada sauce mix, salsa and green chilies are mixed together in a bowl. Then the mixture cooks in the microwave for nine minutes until tender. Next the bowl sits for a few minutes until most of the liquid absorbs. The rice is fluffed with a fork and ready to serve.

Ingredients

  • 2 cups instant brown rice
  • 2 cups water
  • 1 envelope enchilada sauce mix or taco seasoning
  • 1 cup salsa
  • 4 oz can green chilies

Instructions

  1. Combine all ingredients together in a microwaveable bowl. Microwave on HIGH for 8 to 9 minutes or until rice is tender.
  2. Let sit for 3 to 5 minutes and it will soak up the most of the liquid in the bowl. Fluff with a fork and serve.
