Easy Lo Mein

This quick and easy Chinese recipe can be a side dish or main entrée. A sauce is made with soy sauce, sugar, sesame oil, ginger and hot sauce. Then vegetables are sliced or julienned. Next minced garlic is cooked in oil with mushrooms, carrots and zucchini. Fresh spinach is added and cooked until wilted. Then cooked stir fry noodles and the sauce are added to the vegetables. Once everything is stirred together this delicious Lo Mein recipe is ready to eat.

Ingredients

  • 8 oz lo Mein egg noodles
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 cups mushrooms sliced
  • 1 red pepper julienned
  • 1 carrot julienned
  • ½ cup snow peas
  • 3 cups baby spinach

Sauce

  • 2 tbsp soy sauce
  • 2 tsp sugar
  • 1 tsp sesame oil
  • ½ tsp ground ginger
  • ½ tsp Sriracha or other hot sauce

Instructions

  1. In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and hot sauce. Set aside.
  2. In a large pot of boiling water, cook noodles according to package instructions; drain well.
  3. Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, pepper and carrots. Cook, stirring frequently, until tender, about 3 to 4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2 to 3 minutes.
  4. Stir in egg noodles and soy sauce mixture, gently toss to combine.
  5. Serve immediately.

Recipe Notes

I substitute zucchini for the snow peas.
