This recipe is easy to make a quick side for any Chinese entrée. First onion, peas and carrots are sautéed in sesame oil until tender. Then beaten eggs are added to the vegetables are cooked until scrambled. Next cooked rice is added with soy sauce and green onions. Once everything is stirred together the rice is ready to serve.

Ingredients
3cupscooked rice
2tbspsesame oil
1small onionchopped
1cupfrozen peas and carrotsthawed
2 to 3tbspsoy sauce
2eggslightly beaten
2tbspgreen onionschopped
Instructions
Place skillet over medium heat. Add the sesame oil, onion, peas & carrots. Cook until tender.
Slide the vegetables to the side of the skillet, pour the beaten eggs on the other side of the skillet. Scramble the eggs, once cooked mix with the vegetables.
Add the rice. Pour the soy sauce on top. Stir to combine.
Add the green onions before serving.

Additional vegetables can be added such as: 1 finely chopped zucchini, 8 oz finely chopped mushrooms, 1 garlic clove and grated ginger
