Easy Cinnamon Apple Blondies with Vanilla Glaze

Start with making the apple filling by cooking apples, brown sugar, butter, vanilla, cinnamon and nutmeg in a saucepan. Then start the batter by creaming together butter and sugar. Next eggs are added with salt and vanilla. Flour, baking powder, cinnamon and nutmeg are whisked together and added to the batter. Cooked apples are added to the batter before spreading into a baking pan and baked until golden brown. A glaze is made with butter, cinnamon, powdered sugar, milk and vanilla.

Ingredients

  • 2 cups AP flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup butter softened
  • ½ cup granulated white sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • ½ tsp cinnamon

Apple Filling

  • 3 large chopped fresh apples
  • 2 tbsp light brown sugar
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • tsp nutmeg

Vanilla Glaze

  • 1 tbsp softened butter
  • 1 cup sifted powdered sugar
  • ¼ tsp cinnamon
  • 1 to 3 tbsp milk or heavy cream
  • ½ tsp vanilla
  • Chopped walnuts for garnish

Instructions

  1. Preheat oven to 350 F. Line 11x7 pan with parchment paper or foil sprayed with non-stick cooking spray. Leave an overhang on the sides to make it easier to remove the bars from the baking pan.

Apple filling

  1. In a saucepan on low heat add the apples, brown sugar, butter, vanilla, cinnamon and nutmeg. Cook for 4 to 5 minutes to soften the apples a little. Remove from heat and allow the apples to cool completely.

Bars

  1. In a medium mixing bowl, cream the butter until light and fluffy. Add the brown sugar and granulated sugar and mix until combined. Stop the mixer and scrap the bowl.
  2. Then add the eggs, one at a time, beat well after each addition. Add the salt and vanilla, mix well.
  3. In another bowl mix the dry ingredients: flour, baking powder, cinnamon and nutmeg together. Add the wet ingredients and stir the mixture until combined.
  4. Add the cooled apple mixture and mix gently.
  5. Using a spatula and spread the batter evenly in the prepared pan. The batter is very sticky so it might be hard to spread. Spray your hand with cooking spray to help spread the batter evenly.
  6. Bake the bars in the oven for 30 to 40 minutes or until the bars are golden brown and a skewer comes out clean.
  7. Remove the pan from the oven and let cool on wire rack. Once cooled, make the glaze.

Glaze

  1. Add the softened butter, cinnamon and sifted powder sugar to a small bowl, mix well. This will make a paste, then add the milk and vanilla extract to get the glaze to the consistency desired.

  2. Pour the glaze on the blondies and use an offset spatula to spread evenly on the bars. Let sit for 20 minutes to set, then slice and enjoy.

Recipe Notes

Make sure the apples are cooled before adding to batter.
