Easy Chicken Zucchini Bake

This flavorful dinner cooks in a casserole dish. Chopped chicken, zucchini slices, tomatoes, onion and garlic are mixed together in a bowl. Then olive oil, Italian seasoning, salt and pepper are added to the bowl. Everything is mixed together and added to a casserole dish. Next the dish is baked until chicken is done. Mozzarella and Parmesan cheeses are sprinkled on top and the pan is returned to the oven and baked until the cheese is melted.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1 inch pieces
  • 2 medium zucchini sliced into ¼ inch rounds
  • ½ cup diced red onion
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Basil or parsley for garnish

Instructions

  1. Preheat oven to 375 F.
  2. In a large mixing bowl, combine the chicken pieces, zucchini slices, onion, minced garlic, olive oil, Italian seasoning, salt and pepper. Toss until everything is evenly coated.
  3. Transfer the mixture to a 9x13 baking dish and spread in an even layer, making sure pieces aren’t piled on top of each other.
  4. Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 F and the zucchini is tender.
  5. Remove from the oven and sprinkle the mozzarella cheese and Parmesan cheese over the top.
  6. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
  7. Let it rest for a few minutes before serving. Garnish with basil or parsley.

Recipe Notes

For extra flavor, marinate the chicken in Italian dressing for 30 minutes before baking. Add tomatoes if desired.
