Crock Pot French Toast Casserole

A loaf of French bread is cut up and placed in a slow cooker. Then a mixture of eggs, milk, sugar, vanilla and cinnamon is poured on top of the bread. Next brown sugar, flour, cinnamon and butter are mixed together. The butter mixture is sprinkled on top of the bread. After covering the slow cooker, the casserole is baked for a few hours until set. A glaze is made with powdered sugar, vanilla and milk. The glaze is drizzled over the casserole before serving.

Ingredients

French Toast

  • 16 oz loaf French bread
  • 2 cups whole milk
  • ½ cup sugar
  • 2 tsp vanilla extract
  • 6 large eggs

Topping

  • 1 tsp ground cinnamon
  • ¼ cup AP flour
  • ¼ cup brown sugar
  • ¼ cup butter softened
  • ¼ tsp cinnamon
  • Pecans

Glaze

  • ¾ cup powdered sugar
  • 2 tbsp milk
  • ¼ tsp vanilla

Instructions

French Toast

  1. Whisk together eggs, milk, sugar, vanilla and cinnamon in a large bowl. Set aside.
  2. Cut a loaf of French bread into bite size pieces. Place the bread cubes in the bowl of the egg mixture and toss to coat. Let the bread soak for at least 30 minutes, stirring a few time to get all the bread cubes in the egg mixture.
  3. Pour the bread mixture into a 6 qt slow cooker that has been sprayed with nonstick cooking spray.

Topping

  1. Stir together brown sugar, flour, cinnamon and softened butter. Sprinkle the butter mixture over the bread cubes. Place the lid on the slow cooker and cook on HIGH heat for 1 ½ to 2 hours or on LOW for 4 hours, until the eggs are set.

Glaze

  1. Stir together powdered sugar, vanilla extract and milk in a small bowl. Drizzle glaze over the breakfast casserole and serve.
