These delicious tacos are a quick and easy recipe to make for a weeknight meal. Ground beef is cooked in a skillet, then taco seasoning and enchilada sauce are added to the meat. Next tortillas are brushed with oil and placed on a baking sheet. Then shredded cheese is added on top of the tortillas with some of the beef mixture and more cheese. The tortillas are folded over the filling and baked until crispy.

Ingredients
1lblean ground beef90%
1packet taco seasoning
¾cupred enchilada sauce
2 ½cupsOaxaca cheese or Mexican cheese or Monterey Jack
10corn tortillas
1tbspolive oil
Instructions
Preheat oven to 450 F.
Heat a skillet over medium-high heat. Brown the ground beef, breaking it up as it cooks. Stir in the taco seasoning and enchilada sauce. Bring to a simmer, then remove from heat.
Wrap the tortillas in a damp paper towel and microwave for 30 to 60 second until pliable.
Brush one side of each tortilla with olive oil. Place the tortilla on a baking sheet, oiled side down. Add 2 tbsp of the cheese to half of the tortilla, top with ¼ cup of beef, then add 2 more tbsp of cheese. Fold the tortilla over the filling.
Repeat with the remaining tortillas and arrange the tacos in a single layer on the baking sheet.
Bake for 16 minutes, or until tortillas are crispy and the cheese is melted. Let the tacos cool for 3 minutes before serving.
Recipe Notes
If using flour tortillas, bake closer to 10 minutes.
If using street taco shells: use 1 tbsp cheese, 2 tbsp meat then 1 tbsp cheese on top. Use a toothpick to hold closed. Bake for 5 minutes, then flip and bake for 5 minutes more.
