Creamy Velveeta Chicken Penne in Garlic Butter Parmesan Sauce

This quick and easy to make pasta recipe is perfect for a weeknight. Chopped chicken is seasoned and cooked in a skillet. Then garlic is sautéed in butter before adding heavy cream. Next Velveeta cheese and Parmesan cheese are added and cooked until the cheese is melted. Chicken and cooked pasta are added to the sauce and stirred to coat. The pasta is served with additional Parmesan cheese.

Ingredients

  • 225 grams (8 oz) penne pasta
  • 200 grams Velveeta cheese cubed
  • 2 chicken breasts diced
  • 3 garlic cloves minced
  • 3 tbsp butter
  • 50 grams (½ cup) Parmesan cheese, grated
  • 1 cup heavy cream
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

Instructions

  1. Season chicken with salt, pepper and Italian seasoning.
  2. In a large skillet over medium heat, add olive oil and sear chicken until golden and cooked through. Remove and set aside.
  3. Boil pasta until al dente, reserve ¼ cup of the pasta water, then drain.
  4. In the same skillet the chicken was cooked in, melt butter and sauté garlic until golden and fragrant.
  5. Stir in heavy cream and bring to a gentle simmer.
  6. Add in the Velveeta cheese cubes and stir until fully melted and creamy.
  7. Add in the Parmesan cheese and stir until incorporated.
  8. Return the chicken and pasta to the skillet. Mix to coat everything evenly.
  9. Serve hot with additional Parmesan cheese.

Recipe Notes

Add the reserved pasta water a splash at a time, if the sauce is too thick.
