Cheesy Zucchini Bake

This vegetable side dish is another great way to cook zucchini! Crescent roll dough is pressed into a baking pan to make the crust. Chopped zucchini and onion are sautéed in a skillet. Eggs and spices are whisked together in a bowl and gradually added to the vegetables. Mozzarella cheese is added in next, and then the mixture is poured over the dough. Baking in the oven for 30 minutes finishes this side dish. The finished dish is a fancy name for a zucchini squash casserole.

Ingredients

  • 8 oz refrigerated crescent rolls
  • 2 tbsp butter
  • 1 small onion chopped (~1 cup)
  • 4 cups chopped zucchini approx. 4 small
  • 3 eggs
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tbsp dried mustard
  • ½ tsp salt
  • ¼ tsp pepper
  • 8 oz shredded mozzarella cheese

Instructions

  1. Press crescent roll dough into a greased 8x8 inch pan.
  2. Melt butter in medium skillet; add chopped onion and chopped zucchini and sauté over medium heat 5 minutes until tender-crisp.
  3. In medium mixing bowl, beat eggs and then stir in spices. Add small amount of onion and zucchini mixture to temper them; then add remainder of mixture and stir together.
  4. Stir in shredded mozzarella.
  5. Pour mixture into unbaked crust, bake at 400 F for 25 to 30 minutes.
