Cheesy Ranch Potato Foil Packs

These easy to make potatoes are a great side dish for any grilled recipe. Olive oil is sprinkled over chopped potatoes, then ranch seasoning mix, salt and black pepper are sprinkled on top. Next the coated potatoes are placed in the center of a foil rectangle. Each piece of foil is folded around the potatoes to make a packet. Then the potatoes are cooked in the packs for 25 minutes, turning once while cooking. Next the foil packs are opened and sprinkled with cheese and baked until the cheese is melted.

Ingredients

  • 1 ½ lbs red skin potatoes cut into bite size pieces
  • 2 tbsp olive oil
  • 3 tbsp ranch seasoning mix
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 cup sharp cheddar cheese shredded

Instructions

  1. Heat oven to 400 F.
  2. Lightly spray four rectangles of foil with cooking spray.
  3. Place potatoes in a large bowl. Drizzle on olive oil. Sprinkle on ranch seasoning, salt and pepper. Toss to coat potatoes.
  4. Place the potatoes in the center of each foil rectangle, dividing equally. Fold the foil and seal the ends. Place on baking sheet seam side down.
  5. Cook for 10 minutes, then turn the packets and cook for 15 minutes more until potatoes are done.
  6. Remove packets from the oven, open and sprinkle on cheese. Return to the oven for 2 to 3 minutes or until the cheese is melted.
