Breakfast Burrito Casserole

This delicious breakfast casserole is assembled like a sandwich. Flour tortillas are placed in the bottom of a baking dish. Then shredded cheese, salsa, scrambled eggs and cooked breakfast sausage are placed on top of the tortillas. More tortillas are placed on top of the other ingredients. Next a mixture of eggs and milk are poured on top of the tortillas. The casserole is baked for 40 minutes then served with salsa.

Ingredients

  • 1 lb pork sausage
  • 12 large eggs divided
  • 1 ¼ cups whole milk divided
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 tbsp butter
  • 6 flour tortillas quartered (burrito size)
  • 1 ½ cups salsa
  • 1 cup shredded cheddar cheese
  • 1 cup shredded jack cheese

Instructions

  1. Preheat oven to 350 F and spray a 9x13 baking dish with vegetable oil.
  2. Cook sausage in a large skillet on high heat, breaking it apart as you cook it, until it is browned, about 5-6 minutes.
  3. Remove sausage from pan, drain the fat.
  4. In a large bowl, whisk together 6 eggs, ¼ cup milk, salt and pepper.
  5. Add butter to skillet and heat on medium heat.
  6. Add eggs and cook, scrambling them until they’re just short of fully cooked.
  7. In the same bowl add remaining 6 eggs, remaining 1 cup milk and whisk well.
  8. Place ½ of the flour tortillas in the bottom of the baking dish.
  9. Then layer in order: half of the cheese, half of the salsa, eggs, sausage, remaining salsa and remaining cheese.
  10. Place the remaining tortillas on top.
  11. Pour the egg/milk mixture carefully over the casserole evenly.
  12. Bake uncovered for 35-40 minutes.
  13. Serve with sour cream, green onions, cheese and salsa.
