Beef Lo Mein

This delicious dinner tastes better than take-out. Thinly sliced beef is marinated in a mixture of sugar, sesame oil, soy sauce and cornstarch. Then the beef is cooked until brown. Next onions, carrots, mushrooms, zucchini and cabbage are cooked in a skillet before adding garlic. Cooked Chinese egg noodles are added to the skillet with the beef and a sauce made of beef broth, hoisin sauce, soy sauce, sesame oil and cornstarch. Once the sauce thickens this delicious Beef Lo Mein is ready to eat.

Ingredients

Beef:

  • 1 ½ lbs flank steak thinly sliced
  • 1 tsp granulated sugar
  • 1 tsp sesame oil
  • 4 tbsp soy sauce
  • 4 tsp cornstarch

Lo Mein:

  • 2 tbsp vegetable oil
  • 20 oz fresh egg noodles precooked
  • 1 cup thinly sliced yellow onion
  • 1 cup shredded or julienned carrots
  • ½ cup thinly sliced celery
  • 2 cups shredded cabbage
  • 2 tsp minced garlic
  • ½ cup beef broth
  • 4 tbsp hoisin sauce
  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 4 tsp cornstarch
  • ½ cup sliced green onion tops only the green part
  • Salt and pepper to taste

Instructions

Beef:

  1. Place the flank steak, sugar, sesame oil, soy sauce and cornstarch in a bowl. Stir to combine. Cover and refrigerate for at least 10 minutes.

Lo Mein:

  1. Preheat oil in a large pan over medium heat.
  2. Add the beef in a single layer. Cook for 3-4 minutes per side or until golden brown.
  3. Remove the beef from the pan.
  4. Add the onions, carrots, celery, mushrooms, zucchini and cabbage to the pan and cook for 3 to 4 minutes or until just softened. Add the garlic and cook for 30 seconds.
  5. Add the noodles to the pan, along with the beef. Toss to combine.
  6. In a small bowl, whisk together the beef broth, hoisin sauce, soy sauce, sesame oil and cornstarch.
  7. Pour the sauce into the pan and bring to a simmer. Cook for 1 minute or until sauce is thickened. Sprinkle with green onions and serve.

Recipe Notes

I substitute zucchini for the celery.
