Apple Cake with Cream Cheese Frosting

This delicious cake is perfect for fall. First flour, baking soda, cinnamon, salt, nutmeg and allspice are mixed together. Then sugar, oil, eggs and vanilla extract are whisked together and added to the dry ingredients. Next chopped apples are added to batter before pouring into a baking pan. The cake is baked and cooled. Cream cheese, butter, vanilla and powdered sugar are mixed together for a delicious homemade frosting.

Ingredients

Apple Cake

  • 2 cups AP flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • ¼ tsp ground nutmeg
  • 2 cups granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 4 cups chopped peeled apples Granny Smith or Gala (about 1 lb)
  • ¼ cup chopped pecans

Cream Cheese Frosting

  • 8 oz cream cheese at room temperature
  • 4 tbsp butter at room temperature
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350 F. Spray and flour a 9x13 baking pan. Set aside.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, nutmeg and allspice. Set aside.
  3. In a large bowl, whisk together the sugar, oil, eggs and vanilla extract. Slowly stir in the flour mixture. The batter will be thick. Stir in apples until the cake batter moistens. (Add pecans in this step.)
  4. Pour the batter into the prepared pan and bake for 45 minutes or until the cake is golden brown and set. Remove from oven and cool completely on a wire cooling rack.
  5. While the cake is cooling, make the cream cheese frosting. In the bowl of a stand mixer, beat the cream cheese until it is completely smooth. Add the butter and beat until combined. Add the vanilla and powdered sugar and beat until smooth 1 minute.
  6. Frost the cooled cake with the cream cheese frosting.
  7. Cut into pieces and serve. Cover and refrigerate leftovers.
