Sweet Teriyaki Chicken Kabobs

Bottled marinade sauce is the secret to this delicious recipe. Chicken is cut into cubes and marinated in Sweet Baby Ray’s Teriyaki Sauce & Marinade. Then the chicken is placed on skewers with zucchini and pineapples. While grilling, additional marinade is basted on the chicken. Once fully cooked, these tasty kabobs are ready to go.

Ingredients

  • 2 large chicken breasts cut into 2 inch cubes
  • 1 large red pepper/orange pepper cut into 1 in pieces
  • 2 small zucchini cut into 1 inch pieces (rounds)
  • 2 medium yellow onions cut into 1 inch pieces (large chunks)
  • 1 ½ cups Sweet Baby Ray’s Sweet Teriyaki Sauce & Marinade
  • Drizzle olive oil

Instructions

  1. Combine chicken pieces with 1 cup sauce and marinade for 2-3 hours or overnight.
  2. If using wooden skewers soak in water for 1 hour.
  3. Heat grill to medium high.
  4. Skewer meat, alternating with vegetables. Drizzle with olive oil.
  5. Place kabobs on grill.
  6. Grill until chicken reaches 165 F, turning occasionally. Baste with ½ cup sauce and marinade.
  7. Cover loosely with foil and let sit for 5-10 minutes before serving.

Recipe Notes

I substitute pineapple chunks for the pepper. You can use Honey Teriyaki Sauce & Marinade instead of the Sweet Teriyaki flavor.
